Can I use two different antennas on the same node if I leave Tx and Rx set to diversity?  I'm thinking a small omni to support a cluster of nodes and a dish to reach another cluster on the far side of a valley. Same setup over there. The distance is about 3 miles.

I don't see a problem with that. Just like what you'd said: I would still keep it on diversity so you could send and receive on both antennas. I will be setting one up in the same manner as you mentioned within the next couple weeks.
