I'm not clear on exactly how addressing and routing works over the network. If I try to run a traditional client/server application over the mesh network, what would my address for the server look like?

On a wired network it could be "myServer" using netbios or blahblah.net using dns, or 10.10.1.15 using IP. How do I best address on a mesh network?

Client server settings are normally handled by "advertised services". For example, if you have a reference web site connected to a mesh node and you create and advertised link for it, anyone clicking on that link will be connected to the server. Both the user and the server you want to connect to have IP addresses in the same range on the mesh. You don't need to keep track of those because the name service in OLSR will find them for you. You can view a video that contains the process to set up your mesh node with advertised services. See http://www.broadband-hamnet.org/documentation/170-asterisk-rpi-bbhn Look at the part about 5 minutes in where step by step for setting up advertised services is covered.

Thank you for the link. Headed there now to watch it. I'm a complete novice. I have just created two nodes, configured with ver 3 and that's it. One see's the other but that's as far as I've gotten. Rob, W8MRL
